Ingredients for fried rice recipes:
2 tablespoons oil
2.5cm (1 inch) piece pork fat, chopped
4 cloves garlic, chopped
5cm (2 inch) piece fresh ginger, grated
2 teaspoons chopped red chillies
2 chicken thigh fillets, diced
100 g (3 1/2 oz.) pork loin, diced
2 1/2 cups (500 g/ 1lb) cold cooked jasmine rice
1 tablespoon fish sauce
2 teaspoons Golden Mountain sauce
2 spring onions, chopped
1 cup (30 g/ 1 oz.) Thai basil leaves, chopped
1/2 cup (15 g/ 1/2 oz.) coriander leaves, chopped, plus some to garnish
Directions for fried rice recipes:
1. When you will want to start cooking the fried rice recipes with coriander and basil, keep in mind these guidelines. Heat the oil in a wok. When the oil is very hot, add the pork fat, the garlic, the ginger and the chilli and stir-fry for about 2 minutes or so.
2. Add the diced chicken and pork to the wok and stir-fry for about 3 minutes or so, or until the meat changes colour. Add the rice to the wok and loss well using two wooden spoons, breaking up any lumps. When the rice has warmed, add the sauces and toss through with the spring onions, the Thai basil leaves and the coriander. This recipe should be served immediately.
